Picadillo:
2 tbsp sofrito
1 pound ground beef or pork
1/2 medium sweet onion
1/2 cup tomato sauce
2 tbsp minced garlic
1 tsp cumin
1 tsp oregano
5 green olives with 1 tbsp of the olive juice
2 tbsp of dry sherry
In a large skilled over medium heat saute onions, garlic in olive oil until translucent. Add sofrito then ground meat and continue breaking up the meat until browned. Add the rest of the ingredients and allow meat to simmer covered for at least 20 minutes.
Stuffed Peppers:
Remove and discard the tops, seeds and membranes of the bell peppers. Then top bell peppers with the following:
rice (optional)
picadillo
and bake for one hour at 350 degrees. 5 minutes before the bell peppers are done cooking sprinkle cheese on top until melted.
